Tofu Terrorism

I slipped a healthy dose of meat replacement in the lasagna yesterday. Mixed it right in with some pesto and layered it between noodles, sauce and cheese. My daughter said it was delicious. Granted, the chef was not at home to eat this meal, so the audience wasn’t particularly knowledgeable or critical, but it was all the validation I needed. The family should be on high alert that Mom is, once again, tinkering with the family food. I won’t try to put everyone on a vegan diet, that didn’t go so well last time. In fact, my son cannot go for more than 6 hours without dairy. He inhales cheese sticks for breakfast. And that’s one of his healthier habits. But this shift is starting. I’m phasing things out and sneaking things in. You’ve all been warned.
Way to go! We too are eating healthier. I find it hard to sneak things in, but am absolutely weeding out!
I love the title! Skipped over it, read the piece, and wondered what you slipped into the lasagna. Went back for some close reading and discovered “it” right there in the title.
I made black bean burgers for the first time last summer. They were delicious, but my husband’s comments weren’t kind. Now I make regular burgers for him and the others for me. You can lead a horse, right?
One of my favorite tofu sneak-ins is taco soup.
Okay, maybe I’ll give it another try. The tofu sat in the fridge like a brick. Finally, after a month of moving it from shelf to shelf….. I tossed it. All I can picture is the lumps of white in the sweet and sour soup.
I’ll just pretend it’s mozzarella. Thanks for the encouragement.

I’m all for healthy eating but sometimes things can get a bit extreme. My friend became vegan two years ago, tofu was a staple for her. Now tofu is out, she said it is linked to some cancers. I didn’t inquire further, as I am not a major tofu consumer. She is seriously into what she eats, so you might check this info out. Me, I’ll try to stay with the pyramid of food. My dad once went on a kick like this. He tried to make lentil meatloaf. It was so bad the dog wouldn’t eat it.

Every once in a while I get on those kicks, but my daughter can spot those vegetables under mounds of cheese and pizza sauce. She even picks the onions from soup mix out of meatloaf. I suppose she comes by it honestly, from the kid who picked green beans out of veggie soup. Good luck with tinkering with the food!
I love vegetables but I will not eat tofu. I hate the texture. ICK! Maybe you wouldn’t notice it in lasagna.
