I slipped a healthy dose of meat replacement in the lasagna yesterday. Mixed it right in with some pesto and layered it between noodles, sauce and cheese. My daughter said it was delicious. Granted, the chef was not at home to eat this meal, so the audience wasn’t particularly knowledgeable or critical, but it was all the validation I needed. The family should be on high alert that Mom is, once again, tinkering with the family food. I won’t try to put everyone on a vegan diet, that didn’t go so well last time. In fact, my son cannot go for more than 6 hours without dairy. He inhales cheese sticks for breakfast. And that’s one of his healthier habits. But this shift is starting. I’m phasing things out and sneaking things in. You’ve all been warned.
